Even at this time of year, the UT Dallas Eco Hub stays active. This raised planter is filled with young plants: garlic, broccoli, cauliflower, hybrid Storage Carrots and heirloom Dragon Carrots. When harvested, Dragon Carrots look purple-red on the outside, orange further in and yellow at their core —and they’ll taste sweeter that the carrots that are found in most DFW [Dallas / Fort Worth] groceries. Root vegetables such as carrots are ideal candidates for fall planting. They store well, so they’ll make a great future donation to the Comet Cupboard.
