Food Services created a pop-up market in the middle of Margaret McDermott Mall last week, giving the University community easy access to seasonal fruits and vegetables. Local vendors also came in, offering everything from houseplants and flowers to soaps and bath scrubs. For those just wanting a quick, tasty lunch on the go, the UTD kitchens set up an outdoor grill serving a menu that included mushroom and tofu skewers, vegetable sandwiches and pavlova.
